Southern Hoecakes: A Classic Cornmeal Treat

Also known as cornmeal pancakes, hoecakes have deep roots in Southern cuisine and were once a staple for early American settlers. These crispy, golden cakes are quick to make and pair perfectly with butter, syrup, or even a side of greens. Ingredients:
  • 1 cup cornmeal (yellow or white)

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon sugar (optional)

  • 3/4 cup buttermilk (or whole milk)

  • 1/4 cup water

  • 1 large egg

  • 2 tablespoons melted butter or bacon grease

  • Vegetable oil or bacon grease for frying


Instructions:
  1. Mix the Dry Ingredients: In a medium bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using). Stir well to evenly distribute the ingredients.

  2. Add the Wet Ingredients: Pour in the buttermilk, water, egg, and melted butter or bacon grease. Stir until the batter is smooth but slightly thick. If needed, add a bit more water to reach a pourable consistency.

  3. Heat the Pan: In a large skillet or cast-iron pan, heat about two tablespoons of oil or bacon grease over medium heat.

  4. Cook the Hoecakes: Once the oil is hot, spoon about 1/4 cup of batter into the pan for each hoecake. Spread it slightly to form a small pancake. Cook for about 2-3 minutes until the edges look set and bubbles form on the surface.

  5. Flip and Finish: Flip the hoecakes carefully and cook for another 2 minutes until golden brown and crispy.

  6. Serve Hot: Remove the hoecakes from the skillet and drain them on a paper towel. Serve them warm with butter, honey, maple syrup, or even a side of collard greens.
